Jalapeno Stuffed Burgers

These burgers were ridiculously good! 




You'll Need - 

3/4lbs Ground Beef
1/4 Cup Sweet Yellow Onion, Chopped
1 Jalapeno,Chopped
Worcestershire Sauce
Salt & Pepper 

Heat up a small pan and add a little cooking spray. Add in the chopped onion and jalapeno and saute for about 3 minutes. 



Once the veggies have cooked down a little bit add them to the ground beef, along with about a teaspoon of worcestershire sauce and some salt & pepper.




Mix the beef well and form into patties... 




We only have an indoor grill and decided not to close the lid while cooking these...




They turned out super juicy...


Cut up your favorite toppings...



Pile them high...




And Enjoy!

Spicy Carolina Style Pulled Pork




  • My Carolina boy found this recipe online and insisted we try it.
  • He loves Eastern Carolina BBQ and anything spicy so we knew this was going to be a hit! 
  • I didn't like the idea of adding the fat or onions back into the meat so I skipped that step and it turned out amazing.








  • You'll Need - 

  • 3.5 lbs pork shoulder (original recipe called for 5lbs)
  • 2 red onions, quartered
  • 2 yellow onions, quartered

  • Rub:

  • 3 tablespoons brown sugar
  • 2 tablespoons paprika
  • 2 teaspoons sea salt
  • 1 teaspoon freshly cracked black pepper

  • Sauce:

  • 1 cup apple cider vinegar 
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons crushed red pepper flakes
  • 2 teaspoons sugar
  • 1 tablespoon spicy brown mustard
  • 1 tablespoon garlic powder
  • 1/2 teaspoon powdered cayenne pepper



  • Start by making the rub...Combine the brown sugar, paprika, salt and pepper, and rub the mixture over the roast and wrap it tightly in plastic. Refrigerate for at least a few hours but overnight is best.


    To make the sauce...combine the vinegar, worcestershire sauce, red pepper flakes, sugar, mustard, garlic powder, and cayenne pepper in a bowl and mix well.


    Next, place the quartered onions in the bottom of a crock pot. Place the (unwrapped) roast on top of onions and drizzle most of the vinegar mix over the roast. Save a little bit  to add to the shredded meat at the end.


    Cover and cook on low for 7 to 8 hours, or high for 4 to 5 hours. (I actually cooked mine for 10 on low because that's what fit in with my work day!)





    When your meat is done cooking, remove it and the onions from the crockpot and transfer to a cutting board. Remove skin and fat from the pork. Using two forks pull and shred the pork and top with the remaining vinegar mixture if desired! 





    I served this with a side of cole slaw and corn on the cob! But the meat would make an excellent pulled pork sandwich as well!


    And lucky Truman enjoyed the pork bone...

    My Nana's Sloppy Joes


    This is my Nana’s recipe and it’s super easy and soooo good! 
    Nothing fancy, nothing gourmet, just plain old delicious sloppy joes!





    You’ll Need –

    1lb ground beef
    1 chopped onion
    1 cup water
    ¾ cup ketchup
    2 teaspoons yellow mustard
    1 tablespoon worcestershire
    Salt & Pepper
    Hamburger Rolls


    Start by chopping the onion and sautéing for a few mintues. Add in the ground beef and cook through. Drain. Next add in the water, ketchup, mustard and worcestershire. Cook down until the sauce is nice and thick.  Serve on a squishy roll and enjoy!  (a family secret…sloppy joes are extra delicious served with  good old cheese whiz or velveeta and sliced pickles!...TRY IT, I SWEAR IT’S GOOD!!)

    Sausage Peppers & Onions

     

    You’ll Need –

    1 Package of Hot or Sweet Italian Sausage
    1 Large White Onion
    2 Large Peppers (green, yellow, red, etc)
    Garlic
    Salt and Pepper
    Crushed Red Pepper



    Start by chopping the sausage into bite sized pieces and slice the peppers into thin strips (they’ll shrink down as they cook!)



    Add the sausage and veggies to a baking dish and season with garlic, salt, pepper and crushed red pepper. Cover with foil and bake at 375 until the veggies are tender and the meat is cooked through!


    Add to a hoagie roll with some American cheese for a delicious “Fenway Park like” meal J

    Chicken Salad - Buffalo Style

     
    
    I love this chicken salad served with fresh veggies on the side or 
    between bread for a Buffalo Chicken Salad Sammy!


    You'll Need -


    1 Chicken Breat (shredded)
    2 Large Stalks of Celery (chopped finely)
    2 Tbsp Light Mayo
    1oz Crumbled Blue Cheese (or to taste)
    Buffalo Sauce (to taste)


    Mix shredded chicken, celery, mayo and blue cheese. Once combined mix in buffalo sauce to taste.



    Makes 2 servings

    Spicy Meatballs/Meatball Sliders





    You'll need -
    1 lb Ground Sirlion
    16 oz of Tomato Marinara (homemade or store bought)
    1 Egg
    1/4 Cup Parmesan Cheese
    1 Package of Onion Soup Mix
    2 Cloves of Fresh Garlic (minced)
    Crushed Red Pepper
    Salt & Pepper

    Directions -

    Preheat oven to 350 degrees.

    Mix the beef, egg, parmesan cheese, onion soup mix, garlic, crushed red pepper, salt & pepper in a mixing bowl. Form the meat mixture into meatballs. I make pretty large meatballs and usually get 6. Brown the meatballs in a pan on the stove before adding to a glass baking dish with the marinara. If you are using store bought I usually like to add some fresh herbs, garlic, and crushed red pepper to liven it up a bit. Bake covered for about 30 mintues. Remove cover and bake for 5 more mintures to get rid of any extra moisture in the sauce. Let them sit about 5 minture before serving.

    

    Makes 6 Servings

    I like them alone, with a side of green beans or served on top of spaghetti or ravioli! Try them with any of your favorite pastas!

    They also make great meatball sliders





    Pick up slider buns or small dinner rolls from the store. Coat the top bun with a little butter and minced garlic and lightly toast in the oven until golden...think garlic bread! Add a slice of fresh mozzarella cheese and serve on the toasted and garlicy bun!

    Vermonter Chicken Salad


    This recipe is inspired by one of the most delicious sandwiches I have ever eaten! I went to college in Burlington, Vermont...home to the Red Onion Cafe. (http://redonioncafe.webs.com/) 


    The Red Onion is famous for their gourmet sandwiches...most notably the AAAMAZING "Red Onion"...Which is perfection on toast! In between the nutty, toasted bread there's turkey, bacon, apples, red onions, sun-dried tomato mayo and Vermont maple cheddar are all piled high! The sandwich is served warm and is absolutely to die for...my mouth is watering just thinking about it! 


    Here is my tasty tribute to the Red Onion...




    You'll Need -

    2 Cups of Roasted Chicken
    3 Strips of Bacon (use turkey bacon to cut back on fat and calories)
    1 Small Granny Smith Apple
    1/4 Cup Red Onion
    6 Sun-Dried Tomatoes (rinsed)
    1/4 Cup Light Mayo
    Salt & Pepper

    Directions -


    Chop the first 5 ingredients and place them into a mixing bowl. Add the mayo and mix until combined evenly. Season with salt & pepper to taste.


    I love this chicken salad on top of a fresh garden salad, scooped up on wheat thins or along side fresh veggies...or...serve between some toasted whole grain bread with melted cheddar cheese and create your own yummy version of the beloved Red Onion Sandwich!!
